This mama has been having a strong hankering for some fruit pizza! But we have goals, am I right??!!
So the other day I decided to create my own recipe for fruit pizza.. get this.. but with PROTEIN! YUP! Fruit pizza–healthified!!

Protein Sugar Cookies:
(makes 16 servings)
2/3 cup plus 4 Tbsp flour
1 scoop vanilla protein powder
3/4 tsp cornstarch
1/4 tsp baking powder
1/4 tsp salt
2 Tbsp butter, melted and cooled slightly
1 egg, room temp
1 tsp vanilla
1/2 tsp butter extract
1/4 cup honey
3/4 tsp stevia
Whisk dry ingredients together in a bowl. In a separate bowl, whisk butter, egg and extracts. Stir in honey and stevia. Add flour mixture, don’t overmix. Wrap in plastic wrap and chill for 1 hour for cutout cookies. Roll out to 1/8”.
Spray pan with nonstick spray or use parchment paper.
Bake at 325degrees F for 6-8 min.
Once all ingredients have been combined, spray a pizza pan with nonstick cooking spray. Spread dough onto pan. Dipping hands in water as you spread the dough will help so it doesn’t stick to your hands. Bake at 325degrees F for 10 min. Let cool to room temp before adding your topping.
Cream Cheese Topping:
1 pkg light cream cheese (8oz)
1/2 cup icing sugar
1 tsp vanilla
Whip ingredients with an electric mixer until smooth. Spread onto cooled cookie base. Add whatever sliced fruit you wish. Store in refrigerator.
*optional: to prevent fruit from browning in the fridge (ex: bananas, kiwis); mix 1 tsp sugar free (or no sugar added) apricot jam with 1/2 tsp water and brush over your fruit pizza.
